Portobello Pulled Pork Sammie

One of the fun things I enjoy about being plant based is recreating recipes that people would have never imagined being possible to make with plants.  My most recent creation is a pulled pork sandwich and I didn’t use any meat substitutes, I used plants!  Often times I feel like vegans use a lot of meat substitutes that are filled with gluten, wheat, soy, and other fillers that aren’t very good for us and can cause digestion complications, breakouts and other skin issues.  The superstar of this dish are Portobello mushrooms for the Get Your Vibes Portobello Pulled Pork Sammie!

With the season transitioning to fall this is the perfect recipe for a lazy day or night at home.  I enjoyed mine on a Sunday curled up on the couch watching football!

Here is what you’ll need:

Serves 4-5 (or two sammies for two-three people, I definitely had seconds!) 

  • 6 Portobello mushrooms

  • Bag of buns (preferably gluten free)

  • 1-2 bunches of scallions

  • 3-4 cloves of minced garlic

  • Vegan Barbecue Sauce (I used Annie’s sweet and spicy)

  • Hoisin sauce (majority of the brands are vegan)

  • Olive oil

  • Sesame oil

  • Liquid aminos or soy sauce  

  • Vegan mayo

  • Cucumber

  • 1 medium red onion

  • Sesame seeds

  • S&P

Directions:

You want to start by preheating the oven to 350.  Thinly slice the Portobello mushrooms and add them to a baking pan or sheet.  Add 1 tablespoon of olive oil and 1 tablespoon of sesame oil, a sprinkle of salt and pepper, and combine.  Bake the mushrooms for 20-25 minutes.  While the shrooms are baking heat up 1 tablespoon of olive oil and 2 tablespoons of sesame oil on the stove top.  Add the minced garlic and about 1 BIG handful of chopped scallions (save some for the sammies) to the pan and sauté until golden brown.  Once the mushrooms are done add them to the pan and mix them in with the scallions and garlic.   After it’s been mixed add ¼ cup of barbecue sauce and ¼ of hoisin sauce, and 1-2 tablespoons of liquid aminos.  Combine, keep on low heat and let the flavors marinate together.  Toast the buns, add a layer of mayo to the top and bottom, thinly slice cucumber and red onion and add to the bottom bun, portion the shredded mushroom mixture on the buns, top with scallions and sesame seeds and serve!

I served mine with a side of sweet chipotle potatoes chips and it was delish!

Cashew Garlic Dip

Recently I had the opportunity to go on Lunch Break Live with Jane Velez Mitchell and share one of my favorite Get Your Vibes recipes, the always versatile and super easy Cashew Garlic Dip!

I like to make this recipe at the start of each week because I enjoy adding a dollop on my salads, soups, toast and have it ready as a dip for any impromptu hang outs at my house.  It’s convenient and has great flavor.

Start by soaking the cashews in 2 ½ cups in hot water for about 45 minutes to an hour.  Drain the cashews but save at least 1 cup of water, it’s important that all the cashews are covered by the hot water.  In a high-powered blender or nutribullet, add the cashews, cloves of garlic, black pepper, salt, lemon juice, nutritional yeast and then add the cashew water and blend!

It really is that easy!  I love to plate it and serve it as a crudité plate, as a spread on a sandwich as opposed to mayo, and like I mentioned earlier I love adding a dollop on top of my salad, soup or even a pasta dish, it also is a great replacement for sour cream!  So, as you see its simple, healthy and there are so many ways to enjoy it!

Ingredients:

1 ½ cups of cashews

2-3 cloves of garlic (depending on your flavor pallet)

Juice of 1 lemon

½ teaspoon of black pepper

¼ teaspoon of sea salt

¼ cup of nutritional yeast

Q: Tells us about your role at Beats By Dre?

A: I’m a Music Marketing Specialist. My role ranges from helping manage and track budgets, product placement in Music Videos, updating the team on music trends, staying up to date on both emerging and established artist, product seeding, talent management, and lastly, but most importantly providing a platform for artist to bring their vision to life through various creative and experiential properties.

What has your path to Beats been like? 

This could honestly be a very long answer. But in short, it has been an enlightening journey filled with plenty of GodWinks. GodWinks are the signs that happen in life that let you know you’re on the right path. It’s God’s way of winking at you to let you know he has your back. I really pay attention (sometimes too much) to the signs. What I mean by that is my dad use to be a professional drummer, so I grew up in a music household. I played basketball at the collegiate level. I spent 4 years in the U.S. Air Force working in Montana on ICBM’s. Received a degree in Business Marketing at Westminster College in Utah. Worked for a small agency in Venice, CA called Zambezi learning and marketing for culturally relevant sports and lifestyle brands. Then, in 2014 I was blessed with an opportunity to come to Beats by Dr. Dre right after the Apple acquisition. At each of these stops I’ve picked up skills that are helping me thrive in my current position.

I believe one of the most important lessons you'll learn is to just be yourself, and by doing that you’ll attract the people you need to attract. When you attract the right people they’ll help guide you to the right path. It’s also a blessing to have amazing bosses and mentors in your life who’ll give you the tools to prepare you for where you’re meant to be.

A lot of what you do is help bring artists’ creative vision to life, through content, events and marketing.  What’s the key to staying true to the artist, maintaining integrity and marketing their vision?

 Great question. Maintaining integrity is the easiest part for me. I pride myself in being extremely open and transparent with artist. At times I worry that I’m too honest. But what I want to do is continue to operate with integrity because it makes the working relationship better. Every idea has a truth or an insight and I always try to find out what that is. Artist are very creative human beings that create based on experiences or truths, and I just listen to what those are, do my research, and the dots start connecting themselves. If they don’t already have an idea of what they want to do, the ideas come to me or the team naturally because of how in tune we are to insights and truths. 

That’s when the joy really comes, once we’re able to help deliver on their vision and see both the artist, industry and fans feel it and enjoy it.

You recently had the opportunity to work with Big Boi on his album launch, how was that experience for you both personally and professionally?

I want to eventually write a book about this one and not to gloat but to share what I learned from it and to help people who have hopes, dreams and aspirations to do things with people they’ve always looked up to or admired. This is actually the second time I’ve been able to do something like this in my career the first was working with and for Kobe. That’s for another time. 

OutKast is my favorite group of all time. They were the first artist I saw in concert, they were the first artist I knew every word to. I’ve purchased every album both as a group and solo. Watched Idlewild several times. I can write a short essay about this, but I’ll save your readers. We all have an artist we feel this way about and many who feel the same about OutKast. But what was cool about this was seeing how when you’re passionate about something how much it can drive you to do unbelievable things that you don’t even know you can do. This was a breakthrough moment for me in my career. I had a lot of self doubts, insecurities, etc. but while I was working on this project I was plowing through walls going through a million different emotions. I’m sure people thought I was straight crazy I was so determined to work with Big Boi and help him promote his album. I got to experience where he started his career, where he continues to create his music, I got to be around his family. To be honest it didn’t even hit me until it was done. It hit me when the content went into the world. I was never living in the moment because I was so concerned with making sure every detail was right. But what I do know is that God gave me that opportunity and I had some really amazing people helping me bring that to life from the label, to Big’s management, to my team at Beats, everyone did their part and it was a dream come true. I’m truly thankful and grateful for everything that project taught me. I’ll save the rest for a book or a podcast haha.

 

You are a husband and a dad, your little ones keep you busy, how do you sustain work/life balance and being present with your family?
 

This is a great question and something I’m still very much learning how to do. I work in an industry (music) where a lot of my peers are either single and/or don’t have kids. I came into the industry with both so I put a ton of pressure and unnecessary stress on myself in the beginning thinking about that. I doubted myself and felt like I wouldn’t really be able to make it because of those responsibilities. But what I’ve realized is that the most important responsibility you will have in life is being there for your family, and by balancing that correctly and taking care of family first, it gives you the energy needed to do great things in any aspect of your life. So now, sustaining it and being present with them really helps keep me grounded and gives me an outlet to escape the constant demands and madness that come with work.

Another blessing and something I don’t take for granted is having co-workers who believe in my future and are understanding of how important it is to balance work/family definitely helps. But it also means I have to work smarter and be efficient and focused with my time. I wear this bracelet that has the word “balance” on it as well to give myself a daily reminder, because life is really all about balance. 

Lastly, a lot of prayer and meditation. =)

How would you describe the impact that music can have on people?

 I’ve always said the only thing that can change the world and make it a better place is music. I say that because the right music can evoke the most amazing feeling and it can really bring people together if used correctly. It can lift you up when you’re down, pump you up for a workout, remind you of a past experience, and if you put a slow jam on when you’re in a dark place, it can make you cry - I could go on. 

Think about all the things that can have an impact on your life outside of music…now add music to those things and think about how much it enhances those moments.

I also think about it like this, when you go to a festival or a concert to see an artist think about how many different types of people come to a show? Now think about all the different ways that artist and his music has impacted peoples lives? The beautiful thing about that is how it brings people together for both the same and different reasons.

I’ll end with this, think about a life with no music? A movie or show with no music? 

What are some beliefs or truths that you live by, whether it be personal or professional?

I always use the term “Teamwork Makes the Dream Work”. Anyone that knows me knows I’m really about that and preach it. There have been times I’ve gotten away from that and when that happens there’s usually a harsh lesson that follows. You can’t do anything by yourself, it usually almost always takes a team of people.  My other new mantra is “Be a Light”. I feel like being a light is important, there’s such a positive connotation to what it means to be a light. There’s nothing negative about light, it only attracts and exudes positive energy.

What are Vibes to you?

Vibes to me is the energy that radiates off of you. Positive energy you can feel. People who are positive and exude love carry extraordinary Vibes. There are bad Vibes too, but no one wants to talk about bad Vibes. 

How do you Get Your Vibes?

The first thing I do to get my Vibes is put on music. Sometimes I just meditate. Go to the beach, there’s something about the water, and the sun and the energy that radiates off of people at the beach. I ride my bike and put music on while I ride down the strand. Crystals. Go to the movies, I really love movies, really good TV shows with great storylines and cinematography. I just started burning Sage. There’s also this thing I do when I have the time… if you go outside on a roof or patio or any space where it’s quiet when the sun first comes up, or right as the sun is setting - just sit quietly, there’s this Vibe you get. I call it the Golden Hours (right after sunrise, right before sunset). Basically when the sky has this awesome color to it and there’s not a lot going on, it’s quiet and calm it’s such a dope Vibe. Praying or listening/watching a sermon or motivational speech are also instant Vibe starters.

Vibe of The Week: Not Everyone Will Understand Your Hustle.

This past week I was in Nashville for the TBH Beyond The Game Summit.  This summit was hosted by TBH Sports which is a financial firm for professional athletes and they invited their clients to gather and learn about business and branding off the field.  It was a great event, there was a gala, celebrity basketball game, amazing panels, networking.  Much of the proceeds benefited local charities which was great to see.  It's safe to say,  I gained a lot from a few days in Nashville and had the opportunity to do some networking myself and meet some pretty accomplished and driven individuals.  

I also had the chance to observe and reflect on a few things.  Many people at the summit are well off financially and they didn’t need to be there networking, finding ways to start a business or grow their business, but they were there, trying to better themselves and step outside their comfort zone.  The were uncomfortable being comfortable and I really admire that.  These athletes are used to pushing themselves on the field and it's so great to see them doing the same off the field, they want to be better in every aspect of their life.  That’s when it hit me, you can’t expect anyone to understand your hustle, you can't expect people to understand your drive or your why, not everyone will get why you are the way you are and that is OK! 

This is when focusing on your goals and yourself is extremely important.  You can't let people, places or things distract you from your passions and goals, it's not always easy but it's necessary when it comes to accomplishing tasks, projects and goals, no matter how minor or major they are!

I'll admit that I work A LOT, I don't always have balance but I have priorities and that is good enough for me.  I can't expect my friends and often times my family to understand that I love working so much right now, I love the passion that's driving me, so for me to work on the weekends is not only ok but it's exactly what I want!  I want everyone who has a passion and ambition to own it and not feel bad to hustling and making their own lane.  You owe it to yourself to live your truth and most authentic life!  I am grateful for those around me who understand my hustle, see my vision and empower me to make the best choices for myself.  To anyone out there who is playing small to please those around them, STOP.  You have one shot, don't hold back, hustle, grind, find ways to get it done and by all means do not play small, you've got too much magic for that!

Vibe of The Week: Be Open to Receiving.

After you pray or ask for something, how often do you mindfully check in with yourself to see if you're putting yourself in a position to receive?  Are you holding up your end of the deal and putting in the work to achieve what you asked for?  It's so important for us to be open to receiving and allowing abundance to come to us, without judgment or expectations as to how we are receiving.  Perhaps, what you have asked for doesn't come to you the way you want or expected, but it's still showing up, so it's on you to be open to how you are receiving. If you are wanting more financial  freedom, what are doing to acquire more money?  Hopefully, you're out there making moves, taking on projects, asking for a raise, putting yourself in a position to receive what you have asked for! 

Whatever it is that you want, it doesn't matter how big or how small it is, ask for it! Pray for it!  Work for it!  Continue to be mindful of the effort and actions you are taking to acquire what you have asked for.  Stay the course, be open and allow abundance to come to you.

Vibe of The Week: Don't Negotiate With Your Mind.

Pay attention to the period in the title.  Do not negotiate with your mind, that's it, end of story.  This is something that I tell myself, daily.  Especially when the alarm clock goes off  at 6 A.M., and I (at times) disgruntled put on my workout clothes, "don't you hit that snooze button, remember, you don't negotiate with me", says my mind.  When it comes to setting your mind and brain to accomplish a self improving goal, don't leave any room for negotiation.

Why would you negotiate on something that is going to make you better and improve an aspect of yourself?  So whether it's an early morning workout, meditating,  eating healthy or setting boundaries or a new routine, or having positive self talk, don't negotiate.  Tell yourself that, write it down, hold yourself accountable because you are worthy of accomplishing all your desires and goals. 

Vibe of The Week: Ownership and Responsibility.

When it comes to where we are in the present moment, it is so important that we take ownership of our successes and failures.  When we take ownership, we empower ourselves to make better choices and when we make better choices we will ultimately lead more fulfilled lives.

When we give responsibility to someone else, we are giving away our power.  No one can make choices for you and no one can make you feel a certain way unless you allow them.  Take back ownership, power and responsibility, shifts will start to happen in your life.  How you show up and will greatly impact what shows up for you in life.

What is it that you REALLY want?  Once you’ve decided that, what is your plan on how to make that happen?  An idea or desire is nothing without a plan.  So, plan on what you want and then plan on receiving it, take responsibility for it and realize that things in life are happening for you, not to you.  Remember, when you allow someone to make choices for you or allow them to make you feel a certain way, you are giving away your power.

Tonight, there is a new moon, so the night sky will be dark as we build up to a full moon over the next two weeks.  New Moons are an excellent time to write down your goals, plan and what you would like to manifest in your life.  Spend some time getting still, put the pen to paper and take ownership of your life!!

Vibe of The Week: Habits.

Habits, we all have them, we’ve broken them and built better ones, or gotten off track and formed unhealthy ones.  Habits are a reflection of what we repeatedly do.  Have you purposely built your habits or have you got caught up in the mundane or routine and unknowingly formed unhealthy habits?  We want you to start paying attention to your life on purpose.  Every thought leads to a choice, that choice leads to an action and that action can form a habit, hopefully a habit that has been created by intention with meaning and drive behind it.

What you repeatedly tell yourself is a habit, how you speak to yourself has a huge impact on the choices you make.  Habitually think, empowering, confident, thoughts and that will lead to strong and confident choices.  Last week's Vibe was awareness, let’s use that awareness to look at our habitual patterns and see where we can do better by breaking old habits that no longer serve us.  Think of this as a way to strengthen your choice muscle.  Each time you enhance and change your way of thinking and are making stronger choices, this will lead to stronger results. So strengthen that choice muscle!

Spring, has a new energy to it, things feel fresh and ready to bloom, it’s a great time to not only clean out material items but thoughts, choices, patterns and habits that do nothing for us.  Take some time to sit with yourself, and think about where you can be better and break an outmoded cycle, maybe have a pen and paper on hand to write down all the ways you plan on building positive and strong habits that will help you achieve your goals and have a more defined path to all that you want in life!

Vibe of The Week: Awareness.

Every Monday, we are going to share a Vibe of The Week with our readers.  This can be a thought, mantra or even an idea, something to evolve your thinking and help you Get Your Vibes.

This first edition of #VOTW, is to help create an awareness of energy, also known as vibes.  Do you notice the energy you carry?  Can you feel other peoples vibes and does their energy make you feel good or bad?  We are 100% responsible for our vibes and the energy that we bring every day, it's our choice.   Take pride in the energy you radiate and be mindful of how you allow or don’t allow others to impact your vibes.

For this #VOTW set some time aside to think about energy, period.  Then feel your energy and ask yourself, what am I creating and what am I doing to create my vibes?  Do you take time for yourself to simply do things that make you feel good?  Maybe go for a walk, get out in nature, meditate, or journal, these are all ways to help you become more in tune and aware of your energy and more importantly raise your vibrations.  Energy is real, we all know it, we all feel it, trust it, energy doesn't lie.  We were born with the gift of intuition and the choice is ours to strengthen it, let it guide us in life towards what feels best and to be the most authentic and truest version of our best self.
