Nutritious, check.  Quick and easy, check.  Delicious, check.  This simple dish has it all.  As I just admitted in the Vibe of The Week, I work.... a lot and I am more than ok with that.  But what I am not ok with is putting my health and nutrition second to my work.  Health has and always will come first, this is why I work to develop easy, nutritious recipes.  

This dish works great for lunch or dinner, it's not overly expensive and it will most definitely help you Get Your Vibes!  What I love about this dish is that it's hearty and filling but you won't leave you feeling too full or heavy.  It has that home-cooked feeling (because it is, lol) it has those comfort food vibes!  So let's get started so you can get to cookin!

Ingredients:

  • 1/4-1-2 cup of sprouted brown rice (you can sprout it on your own by soaking in distilled water for 8 hours, covered and in the refrigerator)
  • 1/3 cup of Japanese sweet potato (can use regular sweet potato too but I prefer the Japanese SP flavor for this dish)
  • 1/4 cup zucchini
  • 1/4 cup cherry tomatoes
  • 1/4 cup baby bella mushrooms
  • 1/4 cup sweet onion  
  • 1/4 cup cilantro
  • 1/3 cup liquid aminos
  • 2-3 tablespoons tahini
  • 1/2 avocado (optional)
  • 1/4 cup dill and garlic wild brine (optional, it's a raw, fermented, pickled organic sauerkraut salad that goes great on just about anything! )

Directions:  Preheat over to 400 degrees.  While the over is preheating take this time to start cooking your rice and chop your vegetables.  When the oven is ready, place all the vegetables on parchment paper, and sprinkle some garlic granules or garlic powder on them and roast for roughly 20 minutes.  When the rice is finished, place it in a bowl and drizzle half of the liquid aminos over the rice, then place the vegetable on the rice and drizzle the rest of the liquid aminos.  Next, top with the cilantro, avocado and wild brine, then drizzle with the tahini.
